Why Low-Carbon Diet Matters?

What we eat and how food is produced, have an impact not only on our health but also on the environment.

Climate change is a global phenomenon that happens when greenhouse gases trap the sun’s heat, preventing it from radiating into outer space. Its effects like extreme weather conditions have become increasingly evident across the globe.

Sadly though, it is human activities that exacerbated climate change. What we eat and how food is produced, for example, have an impact not only on our health but also on the environment. Food production alone is responsible for around one-fourth of the world’s greenhouse gas emissions.

While irreversible, we can still mitigate the effects of climate change. This is where low-carbon diet comes in. This is a type of diet where we incorporate plant-based alternatives with smaller carbon footprint into our meal plans. We can only do so much individually, but small efforts are as equally important as large-scale ones.

I have prepared here a quick, easy, and affordable recipe that will hopefully jump-start our low-carbon diet journey towards a healthy and sustainable planet.

Peanut Butter Oatmeal Recipe

Ingredients:

  • 1 1/2 cup water (no milk opt. this time)
  • 1 tablespoon sugar (opt. honey)
  • 1/4 teaspoon salt
  • 1 cup rolled oats
  • 2 tablespoons peanut butter
  • Topping options: nuts, sliced banana, fresh berries, jam, or more peanut butter

Steps:

  • Place the water, sugar, and salt in a medium saucepan and bring to a boil. Reduce the heat to medium-low.
  • Add the rolled oats and stir to combine. Cook, stirring often for 4 minutes. Remove the saucepan from the heat, cover, and let rest for 5 minutes. (You may follow package instructions)
  • Uncover and add peanut butter, and stir until well combined. Serve immediately with your choice of toppings.
